I would like to find out the Postgre version a specific helm chart version supports
Sonar Qube helm : 5.0.0
Sonarqube image : 9.3-community
Current postgre : 12

Your version is past EOL. You should upgrade to either the latest version or the current LTA (long-term active version) at your earliest convenience. Your upgrade path is:

9.3 → 9.9.8 → 10.8 / 24.12 (last step optional)
