I’m currently upgrading our SQ instance to 7.6 and found that MySQL is now deprecated and support will be removed in the future.
Is there some documentation / support on how to migrate to another database?

Not yet, but stay tuned. I expect you’ll hear something on this “soon”. Meanwhile, know that for currently released versions, MySQL will still work everywhere except recent versions of Data Center Edition($).
