I have multiple projects in my instance. I’d like to compile a report instance wide to show all of the vulnerabilities across all of the projects and put this into one report.

Not sure if you’re looking for an overall healthiness report or for a recursive listing all the specific vulnerabilities across all your projects.
If you’re using SonarQube, the Portfolio functionality (available in Enterprise Edition) has the ability to aggregate multiple projects and provide you with a releasability rating that takes vulnerabilities into account.
